“Pride of our land”

The Carpio family is recognized for restoring prominence to the Arequipenian picantera tradition through Tradición Arequipeña. It all began with Hermelinda Carpio Rodríguez, who in 1977 opened a small picantería inspired by the recipes of her grandmothers Anita and María Cuadros, traditional picanteras from the 7 Esquinas neighborhood.

Over time, “La Tradi” became a gastronomic and tourism landmark in Arequipa, innovating with the “Noches de Tradición” (Nights of Tradition) and raising the standard of local picanterías. Hermelinda's legacy transcended generations and inspired her entire family to continue in the culinary world.
